Veganism is the “it” word in town.From celebrities to sports stars, everyone seems to be actively making healthy food choices by going meat-free and caring about their health and the environment. I, for one, couldn’t be happier. But I do know some people who nurture the notion that ‘vegan food hai toh kuch boring hi hoga’.
Here's to busting that myth and letting you in on some of my most favourite vegan recipes that will win over even your non-vegetarian friends.
1. Easy Vegan Nachos
Unlike your regular nachos, this healthy version is more tasty and nutritious so you don’t have to worry about the calories.
2 Whole Grain Tortillas (cut into triangles)
1/ cup Vegan Cheddar Cheese Shreds
½ cup Cooked Black Beans
¼ cup Salsa (of your choice)
A small bowl of Guacamole
Preheat the oven to 400 degrees F. Evenly arrange the tortilla chips in a baking pan and sprinkle cheese over them. Bake them for 10 to 15 minutes until the cheese is melted and the chips turn a nice golden colour. Meanwhile, take a small bowl and stir together cumin and cooked black beans. Evenly distribute this filling and salsa on the chips and put generous amounts of guacamole right in the centre. Garnish with fresh cilantro. Dig in!

2. Chickpea Bruschetta with Sundried Tomatoes
Serve your guests this vegan appetizer at your next house party and get bragging rights for life.
1 can Chickpeas (rinsed and drained)
1 Baguette or Rustic Bread
6 Sundried Tomatoes (drained and chopped)
1tbsp Extra Virgin Olive Oil
1tbsp Lemon Juice
2 Garlic Cloves
Black Pepper (to taste)
2tbsp Parsley Leaves (chopped)
Smash the chickpeas and add the extra virgin olive oil, lemon juice, sun dried tomatoes, parsley, salt and pepper. Mix well. Arrange the baguette in a baking sheet after cutting them into diagonal slices. Now, bake in a preheated oven at 400 degrees F until dry and crisp. Rub the toasts with the garlic and top them with the chickpea mixture. For garnish, sprinkle extra parsley finely chopped and drizzle some more olive oil. Enjoy your tasty snack.
The Clever Meal
3. Veggie Sticks
This crispy vegan appetizer is a perfect snack to hog on when you’re craving for something spicy.
2tbsp Boiled Potato
2tbsp Grated Carrot
1 Green Chilli
2 Garlic Cloves
Salt to taste
1tsp Red Chilli Powder
1/4tsp Turmeric Powder
1tbsp Corn Flour
Oil to deep-fry
Finely chop the vegetables and keep them in a bowl. Now, mix all the spices. Mash them well and make sticks of equal size. Next, add slurry ingredients in a separate bowl and whisk them well. Now, dip each veggie stick in the flour slurry, followed by the breadcrumbs coating. After you coat them, put them in the freezer. Fry the veggie sticks in a pan for 4 to 5 minutes until golden brown. Serve with your favourite salsa!

4. Vegan White Russian
Creamy, delicious and surprisingly vegan – this cashew milk cocktail is sure to take your parties to the next level.
For Cashew Cream:
1 cup Raw Cashews
2 cups Water, divided (plus more for soaking)
1 to 2tbsps Maple Syrup
2tsps Vanilla Extract
30ml Ketel One
30ml Coffee based liqueur
60gms Cashew Cream
Soak the cashews for 2 to 4 hours for a rich and creamy cashew cream. Drain and then rinse them under running water. Place the drained cashews in a blender and add 1 cup of water to it. Blend it till the mixture is very creamy and the cashews are completely pulverised. Now, add the remaining 1 cup of water, vanilla extract, the maple syrup and blend again. Next, take a short cocktail glass and fill it with ice. Pour in the vodka, followed by a coffee-based liqueur. Add the cashew cream. Lightly swirl the contents with a spoon to mix well. Enjoy your drink!
